Slow Cooker Sunday!

Are you ready for some cold weather?  Just thought I would share the recipe for the Turkey Chili, I made last night!  Hope you all have a wonderful week!




Turkey Chili

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound lean ground turkey (can substitute with ground chicken, too!)
  • 2 (10.75 ounce) cans low sodium tomato soup
  • 1 can diced tomatoes, drained
  • 2 (15 ounce) cans kidney beans, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can whole kernel corn, drained(optional)
  • 1/2 medium onion, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon red pepper flakes
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon ground cumin
  • 1 pinch ground black pepper
  • 1 pinch ground allspice
  • salt to taste

Directions

  1. In a skillet, heat oil over medium heat. Cook turkey in until evenly brown; drain.
  2. Coat the inside of a slow cooker with cooking spray. Mix turkey, tomato soup, kidney beans, black beans, corn & onion. Add chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice & salt.
  3. Cover & cook 8 hours on Low or 4 hours on High. 
  4. Great served with a dollop of light sour cream & cornbread!
Freezes well, too!  Enjoy & stay warm!
